Raw refers to the temperature by which our honey is warmed. Our Texas honey is gently warmed to about 120 degrees fahrenheit and is then able to be strained through a cheesecloth, which removes the "bee knees" and the wax. The low temperature allows the antioxidants and enzymes to remain unharmed in our honey. In disbelief? Try it for yourself! You will undoubtedly be able to taste the healthy rawness of North Dallas Honey with every squeeze.
Unfiltered refers to the way we strain our honey. As mentioned in the above paragraph about the rawness of our honey, we strain North Dallas honey through cheesecloth and remove the "bee knees", which are the bees legs, wings, and wax while leaving in all of the pollen, vitamins, enzymes, antibodies and antioxidants. There is a big difference between raw and unfiltered honey and processed honey. Filtered, or processed honey is heated up to 190 degrees and blended with diatomaceous earth, to bond to the pollen and particulates. The honey is then pumped through a high pressure filtration system to remove the diatomaceous earth as well as the pollen. Processed honey is then rapidly cooled, and the end product is a honey lacking all of the pollen and health benefits that remain in our raw, unfiltered North Dallas Honey. The high temperature also kills the enzymes and the antioxidants.
